Store in a cool dry location or in a freezer.
The main risk in storage of dry grain products is insect infestation.
Insects can enter open containers or closed bags and cardboard boxes during storage or shipment. Adult (egg laying) insects are present almost everywhere. We therefore recommend that grain and flour products be stored in air-tight plastic or metal containers.
Freezing (3 days at 0°F) completely kills all life stages of stored grain insects (eggs, larva, and adult). Freezing products for one week at 0°F will allow the center of most containers to freeze thoroughly thereby killing all insects.
Once wheat has been frozen, it may be stored in an air-tight container in a cool, dry area. When opening the container, replace the lid as quickly as possible to prevent other bugs from entering.
If product is kept for several months, or if any signs of insects are seen, an additional freeze cycle may be needed. Continuous frozen storage is great if space is available.
